Objectives and Requirements:
The objective of this course is to make the students with major of Food Quality and Safety understanding the edible oils market in the world, mastering the practice of processing technology of edible oil products, and learning the application of them to the food industry. Meanwhile, the risks of the oil processing are also the interests of this course. The emphasis should be focused on processes for high quality and safety edible oil products, the potential risks in the processes, and the autoxidation and photo-oxidation of the edible oils. The labs of this course and the visits to the factories will help the students know the technology and science well in this field.
